Earl Grey Pancakes with Sweet Cherries

Pancake batter
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 Earl Grey teabag
- 1 cup milk plus more as required
- 1 egg
- 1/2 tsp cinnamon
- 1 tbsp baking powder
- 1 tsp vanilla extract
- 1 tbsp honey
Topping
- 20 dark sweet cherries
- 4 tbsp Greek yogurt
- 1/2 tsp vanilla
- Honey to taste
Instructions
- Preheat the oven to 200 F.
- Heat a pot on medium heat and add in milk. Wait until the milk comes to a boil, then add in the teabag and let simmer.
- Combine dry ingredients together, then add in the tea and milk mixture as well as the wet ingredients to create a smooth pancake batter.
- Heat a pan on medium heat with some oil or butter.
- Pour 1/4 cup of your batter onto the pan.
- When bubbles start to appear and the underside has become golden brown, flip the pancake. Reduce the heat to medium-low and cook for 1-2 minutes.
- Transfer your pancake onto a baking sheet and keep it warm in your oven. Repeat steps 3-6 for the remainder of your batter.
- To make the topping, crush about 15 cherries, reserving the rest to be served on top. Then, add in the Greek yogurt, vanilla and honey and mix well.
- Lay out one pancake and pour some of the cherry and yogurt topping on top. Repeat for all pancakes, and add the remaining cherries on top. Serve hot and enjoy :)
